I have six strings of different scale lengths and string sizes.. .good enough for me. haha
Kmac says everything djents, you only need the right tone. Just use his Pro Tip video about getting SICK guitar tone.
Once you start going into baritone territory in terms of tuning, 7 string and below most guitarist play alot of single note riffs, they use alot of octaves, they don't really just chug on the same string. Most of the popular bands do pretty technical melodic and rhythmic stuff, and if they are playing chords they usually use almost all the strings for big chord voicings which sound amazing. Also they don't use alot of low end, mostly mids and highs to get the clarity with not alot of distortion. Just check out Monuments, Currents, Unprocessed, Animals as Leaders, Archspire ect. These are just poorly optimised tones, whether that's due to pickups, amp settings, the amp itsself not having enough power and headroom for those low notes mixing ect I don't know.
Personally I'd say 8 string is enough. 9 strings are going a little over board… Though I guess you could tune them to like… E or F and just add an extra high octave instead of going lower. So it's like an 8 string with an extra high string. I'm not the biggest fan of things like double drop D ect but… It could work in some aspects of music… Just… Its hard to work with making it sound good. Some bands do get it sounding nice in recordings though.
Horrible tones on the 8 and 9. Also, I think 9 string is irrelevant. 8 is as far as guitar should go.

I like regular baritone guitars with six strings. Especially the Danelectro sound. I got to this video because I'm considering doing a Stanley Jordan thing with an eight string guitar. I really don't like the un-melodic chugging and thumping of distorted low tuned guitars. Spinal Tap did a great job with their song Big Bottom with three bass players. That sounded good and was entertaining.
